Recipe: Elle’s Banana Nut Bread
I love bread. And despite the mass number of carbs, biscuits are my favorite. During the winter time though, I love to make fruit breads. One of my favorites is banana nut bread. It isn’t a particularly difficult thing to make, but this is the way that I make it.
Ingredients:
- 4 bananas
- 1/3 cup melted butter
- 3/4 cup brown sugar
- 1 egg
- 1 teaspoon pure vanilla extract
- 1 teaspoon baking soda
- A pinch of salt
- 1 1/2 cups of whole wheat pastry flour or regular all-purpose flour
- 1/4 cup of chopped walnuts
- Baking spray or butter to keep bread from sticking to the pan
Preheat your oven to 350°F and butter or spray your loaf pan with Pam.
In a small mixing bowl, combine flour, baking soda, salt, and set aside.
In a medium to large size bowl, mash your bananas and mix in softened butter. I like to use over ripe bananas, you know, once they’ve turned brown.
Add the egg, vanilla and the sugar and mix well so that the egg is well mixed with everything else.
Pour in the flour, baking soda and salt mix and stir.
Add the walnuts to the batter, then pour it all into a loaf pan.
Lick your spoon.
Bake the loaf for about 60 minutes. Let it cool for about 20 minutes.
Once the bread has cooled to room temperature, you can share and enjoy!
I especially like mine for breakfast with a cup of tea.
This particular morning, I mixed one of my favorite combinations. The Lipton Vanilla Caramel Truffle black tea is so yummy, but I pair it with the Traditional Medicinals Echinacea Plus because I like to think I’m giving myself an immunity boost.
